Cottage Garden June Calendar.

Summers here and the weeds are growing, vegetables are ready to harvest and the birds want the fruit. There is quite a lot to do in the cottage garden in June. It’s hard to stay on top of things and that’s why I decided to create a cottage garden gardening calendar beginning with the month of June. So grab your diary and organise your to gardening do list with ECL’s June calendar.



Cotswold Olimpick Games.

The Cotswold Olimpicks, spelled here correctly;) is not only a great day out but one of the oldest surviving Olympic games featuring English country sports and English martial arts like shin kicking! You also have a wonderful excuse to visit Chipping Campden in the Cotswolds where you can get to Dover’s Hill to watch the games. It is on June 3rd this year. Here’s my story of the Cotswold Olimpicks.



Recipe Of The Month.

Cottage Garden Potato Salad.

Potatoes fresh from the garden are delicious and combined with other vegetables that are ready to harvest you can create this fresh hearty summer cottage garden potato salad.

Ingredients:

  • 2lbs Baby new potatoes, scrubbed but not peeled
  • 2 green apples, remove core and chop
  • 2 green onions, chopped
  • 3 celery stalks, finely chopped
  • 2/3 cup homemade mayonnaise (from the store is fine)
  • 2-4 radishes chopped (add to taste)
  • Fresh spinach chopped (add to taste)
  • Sea salt and ground black pepper
  • Add herbs to taste, fresh dill, parsley, or chopped rosemary

Method.

1) Cook the potatoes with their skins on in salted boiling water (boiling sea water is wonderful for cooking potatoes) for about 20 minutes.

2) Drain the potatoes until dry and then immediately add the rest of the ingredients and stir well until it is all mixed in. Then let it cool and serve cold.

Serves 6.

Simple and tasty. It’s a great salad to serve during the summer months.
